Protein Packed Berry Breakfast Smoothie Bowl
I've been obsessed with smoothie bowls for the last few years. It's seriously the best way to get over 10 grams of protein, and a lot of my daily fibre & vitamin C intake first thing in the morning and keeps me full until lunch. Sometimes I make one of these post workout for a little carb and protein kick. The great thing with smoothie bowls is that you can dress the top however you like!
1 cup Coconut Water
1/2 cup frozen strawberries
1/2 cup frozen bananas
1/3 cup vanilla greek yogurt
1/4 cup unsalted nuts (cashews, sunflower seeds, flax seed)
2 tbsp chia seeds
10-15 dark chocolate chips
2 tbsp assorted, unsalted nuts
1 tbsp shredded coconut
1 tsp chia seeds
1. Combine coconut water, frozen strawberries, frozen bananas and greek yogurt into blender.
2. Once smooth, add in nuts, chia seeds and chocolate chips. Pulse until blended, but still chunky.
3. Put smoothie in bowl and top with your choice of berries, shredded coconut, chia seeds, nuts and enjoy!
